Ghirardelli Chocolate Shortbread Cookies

I made some of these Shortbread Rounds for my friend Ben's birthday at work! It's a recipe that doesn't use any leavening agents, so they remain as little round cookies. The dough is also crumbly when you make it, until you squeeze them around in your hand to make the balls.

Preheat oven to 350 degrees

1 cup (2 sticks) butter or margarine (butter has to be at room temperature)
1/4 cup sugar

Whip butter and sugar together with hand mixer.

Add gradually:

2 cups flour

Dough will be crumbly!

Add 1 cup Ghirardelli Milk chocolate chips (or any large chocolate chip)

Form into 1 inch balls on non stick baking sheets (or whatever you like to use)
Bake for 13-15 minutes. Cookies will be light in color when baked. Dust with powdered sugar when they are fully cooled.
